Blueberry pastry & Sugared almond pastry

One day, boyfriend has sweet tooth and craves for blueberry pastries:) Hence, I chose to make blueberry and sugared almond pastries for him, using the recipe from anncoo's blog. When the pastries came out freshly baked from the oven, the crust was crispy and buttery. The blueberry filling was sufficiently sweet and makes a nice afternoon high-tea snack:)

To reduce the preparation time, I bought ready made pastry sheets, canned blueberry fillings, as well as a packet of almonds from the supermarket. Without the hassle of making the pastry sheet, everything can be done within An hour:)




Procedures for blueberry pastry:


  • Place puff pastry sheet on a lightly floured table top or pastry mat (make sure the sheets are dry and cold; once it is wet, it will be difficult to handle) and use pizza cutter to cut pastry sheet into 9 equal square sheets.
  • Make a straight cut about 1/2 inches from the edge using a cutter to make two opposing "V" cuts on the corners and keep two of the corners still attached to the edge.
  • Egg wash the edges then fold the edges one through the other and press lightly and place square sheets on lined baking tray.
  • Egg wash the edges again and spoon blueberry filling into the center square.
  • Bake at preheated oven at 190C for 20 mins.  
Procedures for sugared almond pastry:
  • Place puff pastry sheet on a lightly floured table top or pastry mat (make sure the sheets are dry and cold; once it is wet, it will be difficult to handle) and use pizza cutter to cut pastry sheet into equal rectangular sheets.
  • Egg wash the pastry sheets and sprinkle the sheets with almond toppings and sugar.
  •  Bake at preheated oven at 180C for 18 mins.
