Make your own Bak Kwa (BBQ Jerky)

One day, I chanced upon a website on Bak Kwa (BBQ Jerky) recipe by Jessie. Being curious about how it will really taste like, whether it is even close to the original bak kwa taste, I decided to try the recipe. To my surprise, it is really close to Bak Kwa taste and the meat was very juicy and tender. 

For those who wants to try it at home, can follow the recipe by Jessie. Mine turns out better than what I expected:)

My First attempt to make my own Bak Kwa:)


Makes about 16 Bakkwa (5cm x 5cm)
Ingredients: 
 450g Minced Pork(半肥瘦豬肉碎)  
3tbsp White Raw Sugar
2tbsp Honey
1tbsp Light Soy Sauce
1tbsp Oyster Sauce  
1/2tbsp Shao Shing/Chinese Cooking Wine  
1/2tbsp Fish Sauce  
1/8tsp Five Spice Powder  
White Pepper & Salt to taste

Procedures:
1. Place all ingredients in a big bowl. Use chopstick to mix till it becomes gluey. TIP:It is said that when mixing, we have to do it in the same direction.
2. Slap the meat for a few times onto the bowl. Wrap the bowl with cling wrap & refrigerate for at least 1 hour to let the flavours enhance. 
3. Preheat oven at 160C(fan forced). Line non-stick baking paper on a 31.5cm x 31.5cm baking tray. Remove the meat from the fridge.
4. Use your bare hand to spread the meat on the tray to an even, thin layer. You can pat the meat if necessary.  
5. Cook in the oven for 20 minutes. Remove the tray & let it to cool. Increase the oven to 220C.
6. Once the meat is cool enough to handle, cut them into the size/shape you want.Back to oven to cook for about 3-5 minutes.
